Festive Fudge
Ingredients

1 can condensed milk
60g Raw Sugar
125g butter
1 tbls liquid glucose 20g (available form supermarkets)
200g white chocolate
Approx 60g Pistachios
Approx 50g Cranberries

Method

  • Add to TM bowl milk, butter, sugar and glucose – cook 100⁰ C – 8 mins – speed 3
  • Cook further 20mins varoma temp – speed 3
  • Add chopped chocolate or chocolate buttons and a handful or so of pistachios and dried cranberries stir through 10 secs  speed 3-4 -until choc is melted
  • Pour into lined square pan or slice tray, smooth out and sprinkle some more pistachios and cranberries- refrigerate until set.
  • Slice into small squares.

  1. Hi,

    Can you please clarify how much sugar this recipe calls for? It says 1 cup (which is about 240gm) followed by 80gm. Which is the correct amount?

    I just made it with 240gm and it is delicious, but would it work with only 80gm?

    And why is step 2 included if not necessary?

    • This recipe is based on a number of fudge recipes that are standard ingredients. I used 80g of Rapadura at the time of doing this recipe because with rapadura you do not need as much. However I have since discovered I am allergic to it or rather intolerant so I can’t actually have it now. But I still reduce my sugar in ALL recipes dramatically. Hence the 80g.
      I have left the usual amount of sugar required but I think it “personally” unnecessary to have that mount of sugar.
      Step 2 is if you need to use a flexible scraper to get it out – I didn’t find it necessary.
