New Recipe….. I’ve been making Quince paste for a couple of years now .. I’ve perfected my own recipe with a twist and with less sugar …. .

The recipe is in full at the bottom of all the photos. I thought to really do this recipe justice I would take you through step by step in detail.

You will need some beautiful Quinces …

You will need to wash and peel your quinces, quarter them , and core them.
Tip – Cut off the tops and bottoms of the Quinces, then peel them , halve them, halve them again and cut out the cores
These are a very hard fruit so have a good knife and watch your fingers !
Do not throw anything away.

Place the Tops and Bottoms, Peel and Cores into the Thermomix Bowl and blitz as per recipe below

Add to this Mix the Vanilla Bean , Lemon Peel and Water

Pop the Varoma on and place the Quince Quarters in it. Cook as per recipe below.

Once cooked set aside the Fruit and Strain the Quince Peel and Cores Mix through your Thermomix Basket.
Leaving you with a beautiful liquid. Take note of the amount and write that down.

Then get a fine seive and sieve through the strained mix

Now after all this effort you really don’t want grainy Quince Paste do you! So take an extra step and place the liquid through a nut milk bag. If you don’t have a nut milk bag just sieve it through your fine sieve again.  A nut milk milk is a really great item to have for so many uses.  You could also use a piece of muslin.

Add the Juice and Quinces to the Bowl and take note of the total quantity.  I had a total of 1300g of the fruit and liquid.
Next add your Lemon Juice & sugar .

You will cook it down to a beautiful ( VERY HOT) thick syrupy mix.

It will set beautifully in your lined tray.

I have been making a lot of Quince Paste so I have wrapped this lot up in glad wrap and baking paper. Quince Paste will last in your fridge up to 12 months . But once you have given it away to friends and family you will find that it won’t be around that long !
Quinces only grow for a small season between March and May so its great to make up a few batches to last you  through the year.

QUINCE PASTE infused with Vanilla

Ingredients

1500 g quinces
650 grams sugar, approximately
700 g water
1 vanilla pod split ( You can feel free to leave this out if you don’t have one -don’t substitute with extract or paste)
3 pieces  of lemon zest
20 gLemon Juice

Method:

You will need to wash and  peel your quinces, quarter them , and core them.
Tip – Cut off the tops and bottoms of the Quinces, then peel them , halve them, halve them again and cut out the cores

Put into the Thermomix bowl (Place the Tops and Bottoms, Peel and Cores) and chop for 10 seconds on Speed 5

Add in the Split Vanilla Bean , Lemon Peel and Water. Place the Quince Quarters in the Varoma. Cook for 25 Minutes on Speed 1 at Varoma Temperature.

Once cooked set aside the Fruit and Strain the Quince Peel and Cores Mix through your Thermomix Basket. Leaving you with a beautiful liquid. Take note of the amount and write that down.
Strain the liquid once again through a Fine Sieve and then to really get this liquid smooth strain again through a Nut Milk Bag . ( If you don’t have a Nut Milk Bag get yourself one ! or use a piece of Muslin. If you don’t have either of these just strain through the fine sieve a second time)

Dispose of the pulp, vanilla bean and lemon peel mix and wash and dry the Thermomix Bowl and lid thoroughly.

Weigh the liquid and pieces of quince in to the TM bowl.  Note the weight.  ( I had 1300g made up of 500g of Liquid and 800g of Fruit) If its approximately around the weight I have then the sugar amount I have used will work. If you have used more fruit and have higher amounts you will need to adjust your sugar up.

Add lemon Juice Blend for 15 seconds at Speed 5.

Add the sugar to the TM bowl.  Mix for 15 seconds at Speed 5.

Cook for 55 minutes at speed 5 on Varoma Temperature To reduce the splatter place Paper towel over the hole and then pop your Thermomix Basket on the top.
TIP: Half way through ( approximately ) I let the mix sit for 20-30 minutes – this allows the mix to deepen in color. However  if running out of tie just continue with the mix or even leave for 10 minutes half way through )

Cool in bowl for 3-5 minutes and then pour into your cling wrapped trap. Allow to cool in the tray and then cover and place in the fridge.

NB: if you have problems with your Quince Setting it means it wasn’t cooked enough this can all depend on the amount of fruit liquid sugar ratio. So make sure before you pour out into your tray that its thick. When the mix is cooling in the bowl it will start to thicken and harden . If its not give it another few minutes
{ Another way to test “set-a -bility” is to take a teaspoon full and pop it onto a china dish and pop in the fridge and see if firms up } 

The next day take out the tray and cut up your quince paste and store how you wish . I keep mine in a container lined with baking baking paper in between layers of the quince squares to keep them from sticking together.

Quince Paste makes beautiful gifts and stores in the fridge for up to 12 months .
